This One Minute Hollandaise Sauce Recipe is by far the easiest and is so good you will use it often with your Eggs Benedict! We used this on our Easter brunch Eggs Benedict and it was delish.
One Minute Hollandaise Sauce
1/4 c butter
1/4 c heavy whipping cream
2 egg yolk, beaten
1T lemon juice
1/4 tsp dry mustard
1/4 tsp salt
cayenne (to taste)
chives, for dusting
Directions:
Melt butter, heavy cream, egg yolks, lemon juice, mustard and salt. Beat manually for a few seconds. Place in microwave for 15 seconds on high. Remove and whip. Repeat this process 3 more times or until sauce has become thick and rich.
Note: Microwaves may vary, sauce may take more or less time. If sauce starts to curdle, place bowl in cold ice water and whip.
Makes approx 3/4 cup.
